Well I set myself a little challenge of trying to try at least two things from Pinterest a week as I found that I was forever pinning things but never actually doing them. This blog is more for me so I have an organised way of keeping a record of exactly what I've tried and how it went. 

So, the first thing I've tried (perhaps not quite the first thing I've tried, but the first thing worth mentioning) is the two ingredient oatmeal cookies which I found via Pinterest here

They're supposed to be very healthy containing only oats and bananas and also whatever extra ingredient you want to add. They sounded almost too easy so felt like a good place to start. 

To recap, the recipe says: 

Ingredients: 
-2 ripe bananas
-1 cup of quick oats

Method:
-Put the bananas in a bowl and mash well until almost purée consistency
-Add the oats and mix well until fully combined. 
-You can also add your own additional ingredient here if you want for example chcolcate chips/raisins etc
-Mould the mixture into small cookie shapes
-Place on baking tray and put in oven for 350 degrees

Well... I tried it and it worked! Granted they're not as nice as actual cookies, they do taste quite strongly of bananas and have the consistency on the inside of almost banana bread. They're very moist and stay so for a couple of days (they might've done for longer than that but they haven't lasted any longer yet). They also feel very virtuous as even if you eat half of the cookies in one go, you've only really had 1 banana and half a cup of porridge oats.

I particularly liked the idea as my partner has very high cholesterol and the dietitian I work with said that one of the best foods that you can eat to lower cholesterol is porridge yet he (and me) don;t like it that much. Well this then seems like an easy way to make sure that you eat it without actually feeling like you have. 

A couple of things worth noting, 

-To mix them you literally do need to mix with a fork, you don't need to add them to any sort of mixer, so you only end up generating two dishes to wash up while making them, which is the bowl you mix them in and then the baking tray! 

-I'm never quite sure how much a 'cup' is so I just kept adding until the mixture felt like it wouldn't take much more and still hold together, if that makes sense, so I mixed until it looked like this: 

On reflection, mine look a lot more 'oaty' than the ones in the original picture so you might want to add a few less oats. 

-I made the cookies and then added the additional filling afterwards to each one individually just by poking the bits in while they were on the baking tray, I did it this way as I wanted to add quite a few different things and thought it'd be easier. I added raisins, stem ginger, peanut butter and some chocolate. I wouldn't recommend the peanut butter, even though I love it as unless you add a lot of it you can hardly taste it as the banana taste is quite strong. 

-I cooked at 200 degrees.

The picture doesn't quite do them justice, they really are nice, and I can honestly say after having made them a few times now, you  can make them start to finish in 25 minutes as they are so so quick!
